• In a shot glass combine 1/2oz each gin and tonic water. Add a few dashes of bitters and stir. Hopefully your tonic has actual bubbles in it unlike mine.

Cocktail: Once & Future— hey, that’s the name of the book! Also the O & F made me think Old Fashioned, so…

• Fill a rocks glass with ice. Add 3oz Celtic Honey and a few dashes of bitters. Stir, and garnish with an orange slice and maraschino cherry.
